If you’re going to call yourself a Texan it’s important that you understand the good, the bad and the ugly about TEXAS BBQ! I came across a saying by Rosemary Kent – “It’s been said that Texas is a place where they barbecue everything except ice cream.” Hmmm…..I might bargain my pink Cadillac that you might just find BBQ’d ice cream at the Texas State Fair!
Now, if you’re going to be Bar-B-Que’in/Grillin’/Smokin’ any kind of meat, you are required to have a science degree to get it all right! Trust me, my husband Joe get’s out of bed before the good light of day to fire up his Oklahoma Joe’s smoker! I have seen what it takes to get the wood, the temperature and the smoke just right to create a perfect slab of brisket by the end of the day.
Texas is chalk full of OUT OF THIS WORLD Bar-B-Que and once you’ve settled into your new digs go on out and find your go-to BBQ place!
